Hear is a verb, My is a noun, Soul is a noun, Speak is a verb.
Hear m soul speak is personification because a soul does not speak and a soul is not a phsicially thing is it a mental thing so shakespear is trying to show that he is speaking from his heart.

Some is a determiner, Defect is a noun, Did is a verb, Quarrel is a verb, With is a prepostion, Her is a pronoun, Noblest is a adjective, Grace is a noun.
